Diamonds

Thomas calls it the "diamond sweater". Sorry, no jewelery....
A nice fleece I found in my local Joann's, not too thick. I always hesitated to make this kind of sweater because of the zipper, but it worked out just fine. Actually it is not difficult at all.

Two down, 6 to go

Hij is helemaal into Halloween namelijk.

A few T-shirts

This one is recycled from an old T-shirt from Daddy, the sleeves are a left-over.

If you think that this one is missing something, I agree. A pocket maybe, or an application. I think I need some flocking foil...

It is really hard to show you a proper picture, Thomas thinks it is great fun to make me take a picture while he is running around.

The pattern is for all three the same: a raglan-shirt from Ottobre.

Spaghetti Carbonara

Another recipe, Spaghetti Carbonara this time. Honestly, Americans, I don't know why you bother with Mac'nCheese. This is so easy and quick! As opposed to Carbonara, Mac'nCheese is heavy, greasy and bland. OK, I guess that if you do it right it could be good, but I never tasted it.
So, how to proceed?
I baked some bacon strips until crisp, put them on a kitchen towel to get rid of excess fat, cut into small pieces. Then I cooked 300 gr of homemade pasta. When done, drained, put back in the pan an added a cup of the water I had taken before draining (this step is supposed to prevent sticking, it worked), added the bacon too. In a bowl I stirred 2 eggs together with some cream and grated Parmesan. I added this mixture to the spaghetti, off the heat, stirred until set and creamy. Done.
With the right kind of prepping this could be even faster then opening a package and stirring water into a powder. If you use bacon a lot, you could make crisp bacon strips, cut them into small pieces and keep them in the fridge so you have them at hand whenever you need them. Same for the grated cheese, although I prefer to grate the expensive Parmesan the moment I need it.

A quick trip down Memory Lane:

Fast Forward:

Croissants

Last Sunday Thomas had the idea to have croissants for breakfast. So Daddy went to the store and as a Thank You he could have one......

According to Thomas, this ice cream is better than chocolate. Fortunately, it is really easy to make.
Start with a can of sweetened condensed milk and boil it in water for about 3 hours. The can should be immersed in water all the time, so maybe you have to add some from time to time, let it simmer at low to medium heat.
Your dulce de leche is now ready and should look like this:

It's not liquid anymore, but transformed itself into a creamy paste.

You can put it in a container and it will be good for at least a week in the refrigerator. That means you can do this ahead of time.
Then the rest of the ingredients:
Heat 250 ml of the milk and the cream until boiling point. Let cool a bit and mix it with the dulce de leche. Start with adding a little bit of the milk and mix until smooth, then add the rest.

Let cool completely. I usually put in in the fridge overnight.
Still no ice cream, though.

Get out your ice cream maker and let it work for about 20 minutes. After that I like to transfer the ice cream to a container and let it set in the freezer.

Enjoy!

Birthday Party

Last Saturday Thomas was invited to a birthday party. We talked about what to get as a gift:

Me: "Next week you are going to M's (a girl) Birthday party. What would you like to take as a gift?"
Thomas: "A dumptruck."
Me: "Just in case we need an alternative, do you have other ideas?"
T: "An excavator, a ball, chocolate."
Me: "I think you don't understand that we are not talking about you." I was wrong......
T: "Gifts for M, and for Thomas a cement mixer!"

:-))

The party was great. Thomas needed his usual 15 minutes to check things out, then he went "dancing". They had one of these inflatable bounce houses, from time to time he came out for a bite of watermelon, all sweaty an red cheeked and went back in to bounce around.

Pasta

The other day we decided that we wanted pasta for lunch. We had enough time so I decided to make it from scratch.
The recipe is very simple: for 100 gr of 00-flour 1 egg. I used 500 gr of flour, 4 whole eggs and 2 yolks. The stand mixer did most of the work, but it needed a bit more kneading.

Then, while the dough was resting we made pesto. Not only can you not have fresh pasta without it, but the plant in the garden was getting out of control and needed a trim.

I had an expert helper. First, separate the leaves from the stalkes.
Second, make a paste of garlic and salt, and add the roasted pine nuts.
Mix it all together, add olive oil and grated Parmesan cheese, et voilá!

OK, back to the pasta.
No way Thomas would let me do this on my own.

We had made more then we could eat, so I prepared the left overs for the freezer.

I don't know if this is the correct way to do it, frozen on a tray and the put in a freezer bag, but according to Jamie Oliver you can throw the pasta nests straight from the freezer into boiling water. If it turns out to be a sticky mess I'll let you know (and Jamie too!)
I froze a portion a the pesto too,  in an ice cube tray. I think it's the perfect size if you want to pimp up a sauce or dressing.
No picture of the final dish, we finished it before I could reach for the camera.

Racing

Last Sunday we had a nice afternoon with friends in the park. The roads were closed because of a race event. Not really an old timer race, but the cars were from the last century.

Do you know what this is?

It's the door handle of this beauty
